In conjunction with January’s observation of "It's okay to be different,” the residents of the Pine Grove Community Residential Rehabilitation embraced their cultural differences through food. Residents enjoyed meals from British, Irish, Italian, German, Hispanic, Greek, and Polish cultures.
- Britain - fish and chips with coleslaw
- Ireland - ham and au gratin cabbage casserole and bangers and mash with peas
- Italy - fried chicken cutlets with spaghetti and tomato sauce and sausage meatball fettucine alfredo
- Germany - German beef rouladen stew
- Mexico - arroz con pollo (chicken and rice) with frijoles rojas (red beans and sauce)
- Greece - lemon chicken and potatoes with feta cheese and green beans
- Poland - kielbasa with pierogies
All the residents participated in this activity and really embraced the challenge of creating a meal in line with their ethnic identity/culture. The meals helped the residents recognize and celebrate their cultural differences. Preparing the meal inspired one resident to reminisce about her past and allowed her to recount times that she cooked the same meal with her family and the joys those experiences brought her. The group looks forward to discover other ways to help residents celebrate the differences that make them unique!
